GREEN BY DESIGN

Sustainability is ingrained in our DNA.

We work hard to keep our carbon emissions as low as possible. One way we do that is by putting our glorious sunshine to good use through solar panels which heat water for our guest and staff rooms. If it happens to be cloudy, we have energy-saving auxiliary water heaters as a backup. Either way, your showers will always be hot!

With our open-air casitas, we’ve also designed out the need for air conditioning. They’re positioned in such a way as to naturally promote cross ventilation and let in delightful ocean breezes. All five are shaded under large trees and feature fans to keep things cool.

Our lightbulbs have been carefully chosen to be energy efficient and we’ve also installed modern low-flow toilets that only use 3 liters per flush.

BIODEGRADABLE CLEANING PRODUCTS

Nestled away in nature, we like to keep things… natural!

Warning! Flammable! Toxic! With labels like these on many conventional cleaning products, going eco was a no-brainer for us. The fully biodegradable products we use don’t contain hazardous chemicals so they won’t adversely affect our ecosystems or us.

HOMEMADE FOOD

Our food isn’t just “home-cooked”, it’s “homemade”.

Can food really be “homemade” when it’s been shipped from faraway lands or unethical farms? We don’t think so. That’s why we source from as close to home as possible, and serve you tasty exotic dishes without racking up thousands of food miles.

We work closely with our local suppliers to ensure that every product is organic, that every chicken is hormone-free and that every cow is grass-fed. Your breakfast eggs will be free-range and your fish will be responsibly-sourced. This way, local farmers and fishermen who do things right can live sustainably while you enjoy yummy feel-good meals by the beach. All of our wines come from South America too, many of which are organic and biodynamic.

REFUSE, REDUCE, REUSE & RECYCLE

Four rules to live by!

These four Rs are the pillars of solid waste management at Latitude 10°. We refuse certain items that could turn into trash like single-use plastic water bottles and straws. We reduce waste wherever possible. That means working with our suppliers to cut out unnecessary packaging, calculating exactly how much food we need for the restaurant to avoid waste, and so on. And whatever can be recycled or reused – like leftovers for compost – certainly always is!

WATER EFFICIENCY

We won’t waste a single drop!

In Santa Teresa, water is a scarce resource. Our summers are bone dry and last for many months. We try to minimize the need for irrigation by only planting native species in our gardens. They can naturally do well without much water. For summertime however, we have a drip irrigation system in place throughout the property’s grounds which ensures that every drop of water is fully utilized.
